Celebration of Apples and Duck
Apple and orange marinated duck on top of apple infused risotto with a cider, citrus reduction and pomegranate. -Chef Scott American Special.

Classic roasted pumpkin soup with artesian mushrooms and toasted sourdough bread. Vegetarian

Beef Mole and lime rice
This traditional Mole takes two full days to create, ending in a rich spiced sauce that deepens the beef flavor. Served alongside light lime rice to break through the depth of the Mole.
Al Pastor Tacos
Al Pastor chicken marinated then sliced thin and stacked onto a skewer then rotated around a roasting fire and sliced off for the most traditional Al pastor. Cilantro creme and pineapple Habanero for a perfect balance of spice and bright, topped with a fresh fruit ‘Pico de Gallo’.
Barbacoa Tacos*
Beef braised in a rich marinade for an entire day to just fall apart as its served with avocados and a powerful ‘Macha’ salsa where a little goes a long way.
Octopus Tostadas (Tostada de Pulpo)
Fried crispy Tostadas with Mexican grilled octopus and a mango salsa with avocado creme’.
Tortilla Siesta Platter*

Pull apart Brazilian cheese bread with an array of shaved beef and pork including; Pineapple habanero marinated beef, honey glazed bottom sirloin, garlic butter braised pork, hickory smoked sausage. An entire Brazilian steakhouse in a single dish.
Shrimp Ceviche
A Peru famous dish made of lime marinated shrimp and a menagerie of mild peppers. With a side of crispy Tostadas for dipping or serving on top of, this light meal is the perfect balance of healthy and satisfying. (Pescetarian)
Beef Empanadas *
Pastry pockets filled with rich beef, stewed vegetables, garlic, onions and a hard boiled egg to make it truly authentic. Baked at a very high heat to get a crisp outside that still tastes great after being reheated. To round out the dish, it is served with a bowl of Colchón de arvejas, or "pea mattress," where peas are mixed with eggs, garlic, and savory spices.
Chivito (steak sandwich) *
This massive legendary steak sandwich from uruguay is the southern American version of the Philly cheese steak. Shaved beef tenderloin with mozzarella, bacon, lettuce, tomato, mayo, and fried eggs. Served alongside a “Pea Mattress” to balance out the heaviness of the sandwich.
Cheese Arepas with Picanha and Mango Salsa*
Toasted cheese Arepas with Brazilian fire roasted beef and habanero mango salsa. Can be made vegetarian by replacing the Picanha with vegetarian ceviche.

East African Steamed Tilapia
This zesty and spicy tilapia fillet sits atop a bed of Ushatini salsa (tomato and chili salsa) and topped with a sweet orange chutney and all wrapped together in a parchment steam basket to make a fresh seafood meal anywhere you go. (Pescetarian)

Looking like a cinnamon roll, this savory twisted pastry is filled with beef and plenty of warming spices from turkey and the middle east and smothered in a hot honey syrup.
Shawarma
Dark chicken meat sliced thin and marinated then stacked on a large skewer and slowly turned over a fire to then be served in a crepe-like wrap and stuffed with greens and tzatziki. Similar to Greek Gyros but with a lighter fillings and focused on the marinating of the meats.

Made famous by the movie, ratatouille is a classic French recipe with roasted vegetables steeped in a reduced tomato sauce to make a heart healthy vegetarian stew, Scotts style changes the vegetables to be more American friendly and adds a cauliflower cheese sauce and fried garlic. Vegetarian

Perhaps the most famous fine dining British meal, made so by Gordon Ramsay, our meal prep Beef Wellington has a mushroom duxelles' coated beef that has been seared and sous vied to a perfect rare so when its warmed back up in the microwave it will still be a tender medium. With a side of butter coated puff pastry it will pair perfectly with our red wine sauce.
Chicken Tikka Masala *
It may sound Indian, but this particular curry is a favorite of England, when the Indian spice road arrived in the UK they reduced the spice and added cream to make a smoother curry. Made with chicken, spices, potatoes, carrots, and served with white rice.
Cock-a-leakie soup*
The national soup of Scotland, not all UK dishes are heavy and thick, this light but savory leek soup is made with peppered chicken and various veggies with a side of plumb infused rice to turn it into a traditional rice soup or buttered toast for a more homely chicken noodle soup bowl.
Chicken Pot Pie*
Family favorite, this pie is made with peppered chicken, peas, carrots, and corn in a Bechamel sauce and baked under a puff pastry.
